Had a bee in my bonnet recently about getting some 'chipotle' chillie peppers. My local Sainsburys has just obliged me and is now stocking some!
I picked them up the other day, but work got in the way of cooking and today was the first chance I got to open the packets. What a smell! Rich, earthy smoky fruity... Smelled great. They are not totally desicated which makes them a little different from the 'normal' Indian dried whole chillies I'm used to. Now whilst I've been after them, I hadn't put too much thought into what is do with them when I got them. Being a fan of hot and sweet I first off tried the Chipotle as a popcorn flavour.
Made a big pan of popcorn in butter and while that was rattling the lid I blended dark muscavado sugar, salt and 1 chipotle to make a dark sweet salty smoky firey mix to stir through the cooked corn.
As my first foray into chipotle I was a very happy man, especially when it went so well with +barefoot cabernet sauvignon... Quite a builder.
